Our weekend

This was the first weekend in...like months probably that we had the whole weekend off. By we I ofcourse mean Drew- since I have every weekend off. It was nice to have a relaxing weekend before Drew starts his job on Monday. It's a great job but is going to mean a lot of hours.

Saturday morning Drew needed to get a suit altered so we went to a mall about 40 min. away instead of the one right next door. I had only been to this mall once and that was years ago. So while Drew was doing his suit stuff Jasper and I walked through some of the outlet stores while sipping on a white hot mocha- me and pomegranate plum juice-for J. Then we met up with Drew and walked around the mall- which is HUUUGE. I ended up getting three dresses- one from American Eagle which used to be my fav but not so much the last couple of years. The other two dresses are from Papaya- a store I had heard of but never been to one. I have to say i Loooove it. It was hard to only buy those two dresses!

Today we met my sis in law and niece Annika for brunch at the Buff in Boulder- which is amazing. She was in town from Iowa for the weekend so it was really great to see them. Tody we have just been getting stuff done around the apartment and today we will be folding about 9 loads of laundry, watching a movie and eating pizzzzaaa. Hope everyone's weekend was fabulous!

Pool + Sun= Super long Nap

Ever since our pools opened up we have been going pretty much every morning that the sun it out- which in Sunny Colorado seems to be about 5 mornings a week. And NO complaints here! We usually go right when they open at 10 and stay till about 12- but today we had some friends meet us there and we ordered pizza and had it delivered to the pool. So since we didnt have to get back for lunch we stayed till 12:45 and Riley (the boy 10 month old boy I nanny for) slept from 12:45 till wait for it......4:30!!! Just call me the baby whisperer (his parents do!) And Jasper slept from 1- 3:45!! Almost a 3 hr nap for a soon to be 3 year old. 3 hours to myself and I barely knew what to do with myself! Soo ofcourse I sat back with an ice cold pepsi and my latest book- Stieg Larssons final book in his trilogy- Girl who kicked the hornets nest. Suuuper good.

Wish List Wednesday




Wish List Wednesday...

1. A HOUSE! Here (Colorado) or in Iowa- wherever we decide to stay after our lease is up in March. Doesnt have to be anything huge or fancy- in fact I prefer more simple houses- but I do want an open floorplan and at least 3 bedrooms, preferably 4. And a fenced in back yard- the fence has to be 6 feet.

2. Finish one of my four college degrees I have started- Political Science, Business, Communcation and most recently- Early Childhood Education.

3. A summer house in Sweden- this is why I dont need my house in the states to be super big or fance, because Im going to have TWO houses :)

4. Unlimited airplane rides back and forth to Sweden to see all of my amazing friends and family over there whenever I want.

Weekly recipe: Swedish pancakes

I have vowed to try at LEAST one new recipe a week- hopefully more.

This weekend the future in-laws were all here for Drews graduation from Denver University. I just have to say I could NOT be more proud of him. In 5 years he graduated with a double major in Finance and Real Estate- always kept a GPA of over 3.5, studied abroad (all of us as a family) for 6 months in SWEDEN all while being an amazing father(since beginning of Jr. year) and usually working at least 40 hours a week. Thats dedication.

Anyway so they were all here and I decided to make us Sunday morning brunch. I make Swedish pancakes for the first time in the US and the consensus was unanimous (sp?) they were amaaaaazing. THere are a ton of ways to make them and heres the recipe I used ( I tripled the recipe since I was feeding 8 people- 5 of them adult males.

Feeds 3-4
3 eggs
1.2 cups of flour
2.4 cups of milk
1 tsp salt
1 tsp sugar
1/2 tsp vanilla extract

mix everything together- beat it so there are no lumps- than let sit in the fridge for 45 minutues. Use butter in frying pan every 3-4 pancakes- which you cook on medium heat. You want the pancakes to be super thin so you dont use very much of the mixture in the pan. We served them with two different types of jam and whipped cream- but my favorite way to eat them is with butter and sugar--YUMMMM. In Sweden these can be served for breakfast, lunch or a light supper.

This mamma IS going to tone up.

The first year after having Jasper I did absolutely NOTHING to lose the 35 lbs I gained while pregnant. In fact after getting the shot 6 weeks after birth I'm convinced I started to gain weight instead of lose it- but we will never know because I stayed VERRYY far away from scales. When we spent 6 months in Sweden from Jan 09- till July 09 I still wasnt working out- but living in downtown Karlstad, Sweden and our main mode of transportation being my own two legs I started to shed the weight and thats even with eating everything in sight, because lets face it, I was on a 6 month vacation in the land of cheese and amazing candy so ofcourse I did. I came back still about 20 lbs heavier than my pre preggo weight so I got a gym membership. I worked out 2-3 times a week for a few months and started getting compliments from those around me which inspired me even more! Buuut than I started nannying full time and going to the gym is now impossible during the week. So I did start some pilates and was seeing results and then got lazy.

Whats my new inspiration? Other than having 4 pools within walking distance? Possible vegas trip in July (more on that later) and a strapless beautiful gown for our october wedding. I am still 10ish lbs heavier- but I used to be super tiny and thats not the goal anymore. Plus if I lost ten more I'd lose by boobs- and those I never used to have and would rather keep. So its going to be pilates and some weight lifting for me. Sooo today since the weather is kinda crappy and def. not a pool day I'm going to make the one mile walk to target to buy some weights and then do some of that during nap time. That plus pushing 50 lbs plus of double stroller weight will be enough for me today!

Here we go...Again.

So I Love reading blogs. Baby blogs, traveling blogs, cooking blogs, blogs in Swedish (more on that later) and I have started by own blog 3 times and just dont seem to be able to keep up with it. This time I'm starting clean and I'm DETERMINED to keep it up. Mainly as a way to remember all the crazy things Jasper is doing these days.

Little about me.
I'm a 23 year old (soon to be 24) stay at home mamma to a crazy, active, adorable soon to be three year old son, Jasper. He will be the star of this blog. I also nanny for a soon to be one year old Riley here at our apartment in the beautiful state of Colorado. My fiance and baby daddy Drew graduates from Denver University in TWOOO DAAYS! We could not be more excited or ready for this change. We are both from a small town in Iowa and moved out here to go to school. We have No clue where we will be living in one year. If I had my way we would be back in Sweden (where I spent the first 12 years of my life and another 6 months last year when we studied abroad.) What else....I love to travel, to try new recipes, go SHOPPING (major, not minor obsession) and I'm currently planning our October wedding- so life is crazy!

Okay thats all for now- but hopefully I will keep this up on a regular basis.
