Caramel Popcorn Balls

There is just something about fall that makes me want to bake. I think it's the change in weather and it finally being cool enough to have my oven on without feeling like my house is a sauna, but whatever it is, fall is when I do most of my baking!

During this time of year we like to make treats to give to neighbors, teachers, and even keep some in the car to hand out to those who look like they could use some cheering up. The kids get really into handing them out, and a few weeks ago I was reminded it was time to make some treats when Jasper asked if we had any snacks for the guy standing at the stop light in the middle of Denver. I didn't have any home made so we made due with some granola bars, but yesterday Tindra and I made some treats so now we are prepared!

One super easy and budget friendly treat we like to make is Caramel Popcorn Balls.

First you pop some popcorn ( I popped my own but you could use plain microwave popcorn as well.)

Then, melt butter all the way on low heat, add in your brown sugar, and Kraft Caramel Bits (almost a full package minus a large handful we munched on while making these.) Stir till it is completely melted.

Next add your marshmallows (we used Jet Puffed Jumbo Pumpkin Mallows. )When that's completely melted take it off of heat and add your popcorn a little at a time, stirring slowly. Allow it to cool a little bit so you don't burn yourself on the hot caramel, but you don't want it to cool completely as it will be really difficult to form the balls.
It should look like this when you are done.

Roll the balls in your hand the size you want and set them to cool.

When they are done cooling you can melt some Bakers semi-sweet chocolate and drizzle over. We make some of the popcorn balls with chocolate and some without.

Wrap them up and start handing them out! You will have some new BFFs after they try these!

We got all the ingredients to make these delicious caramel popcorn balls at Walmart. Right now they have all the ingredients in their Holiday Bake Center which makes it super convenient! They have so many ingredients to choose from and they are really budget friendly, which is a good thing because while we were there I was inspired to get all the ingredients for several other treats we just have to make now that the weather has turned cool.
